8 oz whole wheat pasta (or gluten-free pasta for a healthier alternative)
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/2 cup red onion, finely chopped
1 cup Kalamata olives, pitted and halved
1 cup crumbled feta cheese (or use tofu feta for a vegan option)
1/4 cup fresh parsley, chopped
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
Salt and pepper to taste
Instructions
Boil a large pot of salted water and cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water.
Chop the cherry tomatoes, cucumber, red onion, and parsley.
