  • 1/2 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup crumbled feta cheese (or use tofu feta for a vegan option)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

  • Boil a large pot of salted water and cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water.
