4 large bell peppers (red, yellow, or green)
1 can (12 oz) tuna packed in water, drained
1 cup cooked quinoa or rice
1/2 cup cherry tomatoes, quartered
1/4 cup red onion, finely chopped
1/4 cup Kalamata olives, diced
1/2 cup feta cheese, crumbled
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes.
In a large bowl, combine drained tuna, cooked quinoa or rice, cherry tomatoes, red onion, olives, and feta cheese. Drizzle with olive oil and lemon juice, then add oregano, salt, and pepper. Mix well.
Stuff each hollowed-out bell pepper with the tuna mixture and place them upright in a lightly greased baking dish.
Cover with aluminum foil and bake for about 15 minutes. Optionally, remove the foil in the last 5 minutes for a crisp top.
Let cool for a couple of minutes before serving.
