2 cups of canned white beans, rinsed and drained1 tablespoon of extra virgin olive oil1 medium onion, diced3 cloves of garlic, minced1 bell pepper, chopped1 teaspoon of ground cumin1 teaspoon of smoked paprika1 cup of diced tomatoes1 cup of spinach leavesSalt and pepper to tasteFresh parsley, chopped for garnishOptional: Crumbled feta cheese or olives
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for around 5 minutes until translucent.Stir in the minced garlic and chopped bell pepper. Sauté for another 3-4 minutes until softened.Sprinkle in the ground cumin and smoked paprika. Add the diced tomatoes and allow to simmer for about 5 minutes.Add the rinsed white beans and spinach to the skillet. Gently fold them in and cook for an additional 5 minutes.With the skillet off the heat, taste and season with salt and pepper as desired. Serve garnished with fresh parsley and optional toppings.
