Ingredients

  • 2 cups of canned white beans, rinsed and drained
  • 1 tablespoon of extra virgin olive oil
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon of ground cumin
  • 1 teaspoon of smoked paprika
  • 1 cup of diced tomatoes
  • 1 cup of spinach leaves
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Optional: Crumbled feta cheese or olives

  • Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for around 5 minutes until translucent.
  • Stir in the minced garlic and chopped bell pepper. Sauté for another 3-4 minutes until softened.
  • Sprinkle in the ground cumin and smoked paprika. Add the diced tomatoes and allow to simmer for about 5 minutes.
  • Add the rinsed white beans and spinach to the skillet. Gently fold them in and cook for an additional 5 minutes.
  • With the skillet off the heat, taste and season with salt and pepper as desired. Serve garnished with fresh parsley and optional toppings.
