1 cup of Medjool dates, pitted and chopped
1 cup of rolled oats
1 cup of unsweetened shredded coconut
1/2 cup of almond butter
1/4 cup of honey or maple syrup
1/4 cup of chia seeds
1/4 cup of dark chocolate chips (optional)
1 teaspoon of vanilla extract
Pinch of salt
Instructions
Start by gathering all your ingredients.
In a food processor, combine the chopped Medjool dates, rolled oats, almond butter, honey or maple syrup, chia seeds, vanilla extract, and salt. Pulse until everything is well combined and forms a sticky dough.
Add the shredded coconut to the mixture and pulse a few more times until mixed evenly.
If desired, fold in the dark chocolate chips.
Line a square baking dish with parchment paper and pour in the mixture, pressing down firmly to create a compact layer.
Cover the dish and refrigerate for about 30 minutes to harden.
Cut into squares or bars and enjoy! Store in an airtight container in the refrigerator.
