  • 1 cup of rolled oats
  • 1 cup of unsweetened shredded coconut
  • 1/2 cup of almond butter
  • 1/4 cup of honey or maple syrup
  • 1/4 cup of chia seeds
  • 1/4 cup of dark chocolate chips (optional)
  • 1 teaspoon of vanilla extract
  • Pinch of salt

  • Instructions

  • Start by gathering all your ingredients.
  • In a food processor, combine the chopped Medjool dates, rolled oats, almond butter, honey or maple syrup, chia seeds, vanilla extract, and salt. Pulse until everything is well combined and forms a sticky dough.
  • Add the shredded coconut to the mixture and pulse a few more times until mixed evenly.
  • If desired, fold in the dark chocolate chips.
  • Line a square baking dish with parchment paper and pour in the mixture, pressing down firmly to create a compact layer.
  • Cover the dish and refrigerate for about 30 minutes to harden.
