1 package (16 oz) phyllo dough, thawed
2 cups crushed Oreo cookies (about 24 cookies)
1 cup unsalted butter, melted
1 cup chopped walnuts, optional
1 cup granulated sugar
1 cup water
1 teaspoon vanilla extract
1 teaspoon almond extract
Powdered sugar for dusting
Instructions
Preheat your oven to 350°F (175°C). While that's heating, gently unroll your phyllo dough and cover it with a damp towel to prevent it from drying out.
Brush a 9×13 inch baking dish with melted butter. Lay the first sheet of phyllo in the dish, brushing it lightly with butter. Repeat this with 7 more sheets for a total of 8 layers.
In a bowl, combine crushed Oreos with walnuts if using. Spread one-third of this mixture over the layered phyllo dough.
Add 4 more layers of buttered phyllo, then another layer of the Oreo mixture. Repeat once more, finishing with 8 additional layers of phyllo, brushing each with butter. Cut diamonds or squares in the top layer.
Place the baklava in the preheated oven and bake for 50-60 minutes until golden and crisp.
During the last 10-15 minutes of baking, combine sugar, water, vanilla, and almond extract in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes.
Once the baklava is done, remove it from the oven and pour the syrup evenly over the top. Allow it to cool completely before dusting with powdered sugar.
