12 oz of fusilli or penne pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, chopped (any color)
1/2 red onion, finely chopped
1 cup Kalamata olives, pitted and halved
8 oz feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
Salt and pepper, to taste
Instructions
Step 1: Cook the Pasta – Bring a large pot of salted water to a boil, add the pasta, and cook until al dente.
Step 2: Prepare the Vegetables – Wash and chop the vegetables: dice the cucumber, chop the bell pepper, halve the cherry tomatoes, and slice the red onion.
