  • 2 cups of jasmine rice
  • 1 pound of boneless, skinless chicken thighs
  • 1 can (about 20 oz) of pineapple chunks in juice
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper (red or yellow), diced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Green onions for garnish, chopped
  • Optional: 1 teaspoon of ginger, minced

  • Instructions

  • Gather all of your ingredients. Dice the onions, bell pepper, and chicken, and mince the garlic (and ginger, if using). Drain the pineapple and reserve the juice for cooking.
  • In a large saucepan, bring 4 cups of water to a boil, then add the jasmine rice. Reduce the heat to low, cover, and simmer for about 18 minutes, or until the rice is fluffy.
  • In a large skillet or wok, heat the olive oil over medium heat. Add the diced chicken and cook for about 5-7 minutes until browned. Add the diced onion, bell pepper, garlic, and ginger, stirring frequently until the vegetables are tender.
  • Stir in the pineapple chunks and their juice. Sprinkle in the soy sauce, and let everything simmer for another 5-10 minutes, allowing the flavors to meld together perfectly. Season with salt and pepper to taste.
  • Fluff the cooked rice with a fork, then serve the pineapple chicken mixture over the rice. Garnish with chopped green onions.
