2 cups of jasmine rice
1 pound of boneless, skinless chicken thighs
1 can (about 20 oz) of pineapple chunks in juice
1 medium onion, diced
2 cloves of garlic, minced
1 bell pepper (red or yellow), diced
2 tablespoons of soy sauce
1 tablespoon of olive oil
Salt and pepper to taste
Green onions for garnish, chopped
Optional: 1 teaspoon of ginger, minced
Instructions
Gather all of your ingredients. Dice the onions, bell pepper, and chicken, and mince the garlic (and ginger, if using). Drain the pineapple and reserve the juice for cooking.
In a large saucepan, bring 4 cups of water to a boil, then add the jasmine rice. Reduce the heat to low, cover, and simmer for about 18 minutes, or until the rice is fluffy.
In a large skillet or wok, heat the olive oil over medium heat. Add the diced chicken and cook for about 5-7 minutes until browned. Add the diced onion, bell pepper, garlic, and ginger, stirring frequently until the vegetables are tender.
Stir in the pineapple chunks and their juice. Sprinkle in the soy sauce, and let everything simmer for another 5-10 minutes, allowing the flavors to meld together perfectly. Season with salt and pepper to taste.
Fluff the cooked rice with a fork, then serve the pineapple chicken mixture over the rice. Garnish with chopped green onions.
