1/2 cup sugar
1 cup heavy cream
1/2 cup whole milk

Instructions
Begin by blanching the pistachios. Place them in boiling water for about 1 minute, then transfer them to an ice bath. Once peeled, set them aside to dry.
In a food processor, combine the blanched pistachios with sugar. Pulse until they form a fine paste.
In a saucepan, whisk together heavy cream, whole milk, almond extract, and salt. Heat until it begins to simmer. Gradually whisk in the beaten egg yolks.
Return the mixture to the saucepan and stir in the pistachio paste. Cook on low heat, stirring constantly until thickened.
Transfer the custard into a clean bowl, cover with plastic wrap, and let it chill in the refrigerator for at least 30 minutes.
