4 slices of bread (sourdough, whole wheat, or gluten-free)
2 tablespoons unsalted butter, softened
1 cup shredded sharp cheddar cheese
1/2 cup cream cheese, softened
3–4 roasted jalapeños, chopped
1 tablespoon mayonnaise (optional)
1/4 teaspoon garlic powder
Salt and pepper to taste
Instructions
Preheat your oven to 425°F (220°C). Place fresh jalapeños on a baking sheet lined with parchment paper. Roast them for about 15 minutes until the skin bubbles and darkens. Once roasted, let them cool slightly, then peel off the skins and chop them finely.
In a mixing bowl, combine the shredded cheddar cheese, cream cheese, chopped roasted jalapeños, garlic powder, mayonnaise (if using), salt, and pepper. Mix until creamy and well combined.
Spread a layer of the cheese mixture generously on one side of each slice of bread. Complete your sandwich by topping it with another slice of bread, cheese side down.
Heat a skillet over medium heat. Spread softened butter on the outer sides of the sandwich. Place the sandwiches in the skillet, cooking each side for about 4-5 minutes until golden brown and crispy.
Once cooked, remove the sandwiches from the skillet. Let them rest for a minute before slicing in half.
