1 tablespoon olive oil

1 cup carrots, sliced
1 cup celery, diced
8 ounces mushrooms, sliced

6 cups chicken broth
1 cup heavy cream

Instructions
Gather and prep all ingredients: shred the rotisserie chicken, dice the onions and celery, slice the mushrooms, and mince the garlic.
In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery, cooking for about 5-7 minutes until softened.
