8 ounces of whole wheat pasta (or gluten-free pasta for a lighter option)
1 pound of medium shrimp, peeled and deveined
1 ripe avocado, diced
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons olive oil
2 tablespoons lime juice
Salt and pepper to taste
Optional: 1 teaspoon of chili flakes for a hint of heat
Instructions
Begin by boiling water in a large pot and adding a pinch of salt. Once boiling, add the whole wheat pasta and cook according to the package instructions until al dente. Drain the pasta and rinse it under cold water to stop the cooking process.
In a skillet, heat one tablespoon of olive oil over medium heat. Add the peeled and deveined shrimp, seasoning them with salt, pepper, and optional chili flakes. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from heat and let them cool.
While your shrimp cools, chop the cherry tomatoes, cucumber, red onion, and cilantro.
In a large bowl, combine the cooled pasta, sautéed shrimp, diced avocado, cherry tomatoes, cucumber, red onion, and cilantro. Drizzle with olive oil and lime juice, and gently toss everything together.
Give your pasta salad a final sprinkle of salt and pepper according to taste. Serve it immediately or refrigerate for an hour.
