1 lb large shrimp, peeled and deveined
8 oz smoked sausage, sliced (Andouille or Kielbasa work well)
1 medium onion, chopped
1 red bell pepper, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes with green chilies
2 tbsp Cajun seasoning
2 tbsp olive oil
Salt and pepper to taste
Chopped green onions for garnish
Cooked rice or quinoa, for serving
Instructions
In a large skillet over medium heat, add the olive oil. Once hot, add the sliced smoked sausage. Sauté for about 5-7 minutes until browned and crispy.
Next, toss in the chopped onion and diced bell peppers. Cook for another 5-6 minutes until tender and translucent.
Add minced garlic and Cajun seasoning to the skillet. Stir and cook for 1-2 minutes to allow the spices to release their aroma.
Gently fold in the shrimp and diced tomatoes (with juices). Season with salt and pepper. Cover, reduce heat to medium-low, and simmer for 5-7 minutes until shrimp are cooked through.
Remove from heat and garnish with chopped green onions. Serve hot over rice or quinoa.
