  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Cooked rice or quinoa, for serving

  • Instructions

  • In a large skillet over medium heat, add the olive oil. Once hot, add the sliced smoked sausage. Sauté for about 5-7 minutes until browned and crispy.
  • Next, toss in the chopped onion and diced bell peppers. Cook for another 5-6 minutes until tender and translucent.

  • Gently fold in the shrimp and diced tomatoes (with juices). Season with salt and pepper. Cover, reduce heat to medium-low, and simmer for 5-7 minutes until shrimp are cooked through.
