  • 2 pounds of chicken thighs
  • 4 medium-sized potatoes, peeled and diced
  • 1 cup of carrots, peeled and sliced
  • 1 cup of frozen peas
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 1 can (10.5 oz) of cream of chicken soup
  • 1 cup of chicken broth
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • 1 cup of heavy cream
  • Optional: Fresh parsley for garnish

  • Instructions

  • Season the chicken thighs with salt and pepper. Chop the potatoes, carrots, and onion.
  • Layer the seasoned chicken at the bottom of the slow cooker. Add the potatoes, carrots, peas, onion, and garlic on top.
  • In a bowl, mix cream of chicken soup, chicken broth, and thyme. Pour this mixture over the layered ingredients.
  • Set the slow cooker to low for 6 to 8 hours or high for 4 to 5 hours.
  • About 30 minutes before serving, stir in the heavy cream.
  • Serve hot, garnished with fresh parsley.
