2 large boneless, skinless chicken breasts
1 cup romaine lettuce
1/2 cup Caesar dressing
1/4 cup grated Parmesan cheese
Freshly cracked black pepper to taste
4 slices of your favorite bread
1 tablespoon olive oil
Instructions
Step 1: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and add chicken. Cook for 6-7 minutes on each side until fully cooked.
Step 2: Remove cooked chicken from skillet and let it rest for a few minutes. Smash the chicken into bite-sized pieces using a fork or potato masher.
Step 3: In a large bowl, combine smashed chicken, Caesar dressing, grated Parmesan cheese, and black pepper. Stir until well coated.
Step 4: Toast slices of bread in the same skillet until golden brown.
Step 5: On the toasted side of one slice of bread, place romaine lettuce. Add a portion of the smashed chicken mixture and top with another slice of toasted bread. Repeat for remaining sandwiches.
