8 ounces elbow macaroni
2 cups sharp cheddar cheese, shredded
1 cup smoked gouda, shredded
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups whole milk
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon Dijon mustard
1/2 cup breadcrumbs
8 slices of cooked bacon, finely chopped
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
Step 1: Cook the Macaroni: Boil water in a large pot, add salt, and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Step 2: Prepare the Cheese Sauce: Melt the butter in a medium saucepan, whisk in flour and cook for about 2 minutes. Gradually add milk, whisking until thickened. Stir in garlic powder, onion powder, Dijon mustard, and seasonings. Mix in cheddar and gouda until smooth.
Step 3: Combine the Ingredients: In a large bowl, mix the macaroni with cheese sauce and half of the chopped bacon.
Step 4: Form and Chill the Bites: Shape the macaroni mixture into 1-2 inch balls, place on a parchment-lined baking sheet, and refrigerate for at least 30 minutes.
Step 5: Prepare the Bacon Crust: Preheat oven to 400°F. Combine breadcrumbs and remaining bacon in a small bowl.
