1 pound smoked sausage (turkey, pork, or chicken)
4 medium-sized potatoes (Yukon Gold or red skin)
1 medium onion, diced
2 cloves garlic, minced
1 bell pepper, chopped
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish (optional)
Instructions
Wash and peel the potatoes, then cut them into chunks.
Heat olive oil in a large skillet over medium heat. Slice the smoked sausage into rounds and add to the skillet. Sauté until golden brown for approximately 5-7 minutes.
Add the diced onions, minced garlic, and chopped bell peppers. Sauté for an additional 3-4 minutes until vegetables are soft.
