Ingredients

Scale
  • 34 lbs pork shoulder
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup apple cider vinegar
  • 46 hamburger buns
  • Coleslaw (optional)

  • Instructions

  • Begin by trimming excess fat from the pork shoulder. Season the pork generously with salt, black pepper, smoked paprika, cumin, and cayenne pepper.
  • Heat olive oil over medium-high heat in a large skillet and sear the pork shoulder for about 3-5 minutes on each side until golden brown.
  • Transfer the seared pork to a slow cooker, add onion, garlic, apple cider vinegar, and half of the BBQ sauce. Cover and cook on low for 8-10 hours.
  • Remove the pork from the slow cooker and shred it with two forks, mixing in the reserved BBQ sauce.
  • Assemble the sandwich with pulled pork on the bottom half of each bun and add coleslaw if desired. Place the top half of the bun on the filling.
  • Serve while warm, optionally with extra BBQ sauce on the side.
