  • 12 tablespoons of chili paste (adjust based on heat preference)
  • 1 cup of bok choy, chopped
  • 1 cup of shiitake mushrooms, sliced
  • 2 green onions, chopped
  • 1 soft-boiled egg (optional)
  • Fresh cilantro for garnish

  • Instructions

  • In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 2 minutes). To the pot, add the broth, soy sauce, miso paste, and chili paste. Stir to combine and let it simmer for 15 minutes.
  • In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
  • After the broth has simmered, add the bok choy and shiitake mushrooms to the pot. Cook for an additional 5-7 minutes, until the bok choy is tender.
