2 packs of ramen noodles (instant or fresh)
2 tablespoons of sesame oil
2 cloves of garlic, minced
1 tablespoon of ginger, grated
2 tablespoons of soy sauce
1 tablespoon of miso paste (white or red)
1–2 tablespoons of chili paste (adjust based on heat preference)
1 cup of bok choy, chopped
1 cup of shiitake mushrooms, sliced
2 green onions, chopped
1 soft-boiled egg (optional)
Fresh cilantro for garnish
Instructions
In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 2 minutes). To the pot, add the broth, soy sauce, miso paste, and chili paste. Stir to combine and let it simmer for 15 minutes.
In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
After the broth has simmered, add the bok choy and shiitake mushrooms to the pot. Cook for an additional 5-7 minutes, until the bok choy is tender.
Divide the cooked noodles into serving bowls. Ladle the hot broth with vegetables over the noodles and top with a soft-boiled egg if desired. Sprinkle with chopped green onions and fresh cilantro.
