2 tablespoons gochujang (Korean chili paste)

2 cloves garlic, minced
1 teaspoon ginger, minced
2 cups cooked rice (white, brown, or cauliflower rice for a low-carb option)
1 cup broccoli florets (substitute with zucchini or bell peppers)
1 carrot, julienned

Instructions
In a mixing bowl, combine the gochujang, soy sauce, sesame oil, honey, minced garlic, and ginger. Add the chicken thighs and coat them thoroughly in the marinade. Allow them to marinate for at least 10 minutes.
Heat a non-stick skillet over medium-high heat. Once hot, add the marinated chicken thighs, discarding any remaining marinade. Cook for 6-7 minutes on one side until slightly charred, then flip and cook for another 5-7 minutes, or until the chicken reaches an internal temperature of 165°F. Remove from heat and let it rest for a few minutes before slicing.
In the same skillet, add a splash of water if necessary and toss in the broccoli and carrots. Sauté for about 3-5 minutes until tender but still vibrant and crisp. You can add other vegetables as per your preference.
In serving bowls, create a base of cooked rice. Place sliced chicken on top, followed by the sautéed vegetables. Finish with a sprinkle of sesame seeds and chopped green onions.
