Instructions
In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, beaten egg, salt, pepper, and chopped parsley. Mix everything together using your hands or a spoon until just combined—avoid overmixing to keep the meatballs tender.
Using your hands, shape the mixture into small meatballs, roughly 1 inch in diameter.
Heat a large skillet over medium heat and add a splash of oil. Once hot, carefully place the meatballs in the skillet. Cook for about 10 minutes, turning occasionally.
While the meatballs are cooking, whisk together honey, soy sauce, vinegar, and sesame oil in a small bowl.
Once cooked, pour the honey-garlic sauce over the meatballs in the skillet. Gently toss to coat each meatball and allow it to simmer for an additional 2-3 minutes.
Transfer the meatballs to a serving dish and garnish with additional parsley if desired. Serve immediately.
