1 pound of ground chicken
1/4 cup of breadcrumbs
1/4 cup of finely chopped green onions
2 cloves of garlic, minced
1 tablespoon of soy sauce
1 tablespoon of sesame oil
1 egg, beaten
1/2 cup of sweet chili sauce
Salt and pepper to taste
Instructions
In a large mixing bowl, combine the ground chicken, breadcrumbs, green onions, minced garlic, soy sauce, sesame oil, and the beaten egg. Season with salt and pepper to taste. Using your hands, mix until well combined.
With slightly wet hands, roll the mixture into small balls, approximately 1 inch in diameter.
Heat a large skillet over medium heat and add a drizzle of oil. Once hot, place your meatballs in the skillet. Cook for about 12-15 minutes, turning occasionally until they are golden brown and cooked through.
While the meatballs are cooking, prepare the sweet chili glaze in a small saucepan by combining the sweet chili sauce with a splash of water. Warm it over low heat.
Once cooked, add the meatballs to the saucepan with the glaze, gently tossing them until they are fully coated. Let them simmer in the glaze for a few minutes.
