  • 8 bone-in, skin-on chicken thighs
  • 1/2 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sesame seeds (optional for garnish)

  • Instructions

  • In a large mixing bowl, combine the sweet chili sauce, soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil. Whisk until well blended. Add chicken thighs to the marinade and coat well. Cover and let marinate in the refrigerator for at least 30 minutes.
  • Preheat your oven to 400°F (200°C).
  • After marinating, place the chicken thighs, skin-side up, on a baking sheet lined with parchment paper. Pour over the remaining marinade. Season with salt and pepper. Bake for 35-40 minutes until golden brown and internal temperature reaches 165°F (75°C).
  • Broil the chicken for 3-5 minutes for extra crispness at the end of cooking.
  • After cooking, let the chicken rest for 5 minutes. Garnish with cilantro and sesame seeds before serving.
