Ingredients

Scale
  • 2 cups of fresh strawberries, hulled and sliced
  • 1 cup of Greek yogurt
  • 1 cup of cottage cheese
  • 24 tablespoons of honey or maple syrup
  • 1 teaspoon of vanilla extract

  • 1/4 cup of crushed graham crackers
  • A pinch of salt

  • Instructions

  • In a mixing bowl, combine the hulled and sliced strawberries with 1 tablespoon of honey or maple syrup. Let them sit for about 10 minutes to release their juices.
  • In a blender, combine the Greek yogurt, cottage cheese, remaining honey or maple syrup, vanilla extract, protein powder, and a pinch of salt. Blend until smooth and creamy.
  • Gently fold the macerated strawberries into the blended mixture, leaving some chunks for texture.
  • Incorporate the crushed graham crackers (or nuts) into the ice cream base.
  • Transfer the mixture to an airtight container and chill it in the refrigerator for about 60 minutes.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions for about 15 minutes, or freeze in a shallow dish, stirring every 30 minutes until desired consistency.
