Ingredients

1 pound of ground chicken
1 tablespoon of vegetable oil
1 bell pepper (any color), sliced
1 cup of snap peas
1 onion, diced
3 cloves of garlic, minced
1/4 cup of sweet chili sauce
2 tablespoons of soy sauce
1 teaspoon of cornstarch (optional)
Salt and pepper to taste
Instructions
Chop and slice all your vegetables ahead of time.
In a large skillet or wok, heat the tablespoon of vegetable oil over medium-high heat.
Add the ground chicken to the hot oil, using a spatula to break it up as it cooks until it's no longer pink, about 5-7 minutes.
Once the chicken is cooked through, add the diced onion, sliced bell pepper, and snap peas to the skillet and sauté for an additional 4-5 minutes.
Pour in the sweet chili sauce and soy sauce, stirring until everything is well-coated. If you use cornstarch, mix it with a tablespoon of water before adding to avoid clumps.
Taste and adjust seasoning, if necessary. Serve warm over steamed rice, quinoa, or your favorite grain.
