Ingredients

Scale
  • 1 pound of ground chicken
  • 1 tablespoon of vegetable oil
  • 1 bell pepper (any color), sliced
  • 1 cup of snap peas
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1/4 cup of sweet chili sauce
  • 2 tablespoons of soy sauce
  • 1 teaspoon of cornstarch (optional)
  • Salt and pepper to taste

  • Instructions

  • Chop and slice all your vegetables ahead of time.
  • In a large skillet or wok, heat the tablespoon of vegetable oil over medium-high heat.
  • Add the ground chicken to the hot oil, using a spatula to break it up as it cooks until it's no longer pink, about 5-7 minutes.
  • Once the chicken is cooked through, add the diced onion, sliced bell pepper, and snap peas to the skillet and sauté for an additional 4-5 minutes.
  • Pour in the sweet chili sauce and soy sauce, stirring until everything is well-coated. If you use cornstarch, mix it with a tablespoon of water before adding to avoid clumps.
  • Taste and adjust seasoning, if necessary. Serve warm over steamed rice, quinoa, or your favorite grain.
