Ingredients
Scale
1 large loaf of Italian or French bread (or substitute with gluten-free bread if necessary)
3 medium-sized ripe tomatoes, diced (consider heirloom for more flavor)
1/4 cup fresh basil leaves, finely chopped (dried basil can be used as an alternative but is less aromatic)
4 cloves of garlic, minced (adjust according to your garlic tolerance)
1/4 cup olive oil (extra virgin adds a richer flavor)
Salt and pepper to taste
1/4 teaspoon of red pepper flakes (optional, for added heat)
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, combine the diced tomatoes, minced garlic, and chopped basil. Drizzle with olive oil and season with salt, pepper, and red pepper flakes if using. Mix well to ensure everything is evenly coated.
Slice the loaf of bread in half lengthwise. Cut into thick slices if preferred.
Spread the tomato mixture generously over the cut side of the bread.
Place the prepared bread on a baking sheet and bake for about 15 minutes or until the edges are crisp and the tomatoes have roasted.
Once out of the oven, let the bread cool for a minute, then slice and serve warm.
