Ingredients
Scale
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
2 cups cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 cup sour cream
1 cup chopped pecans (or walnuts for a nutty twist)
1 ½ cups caramel sauce (store-bought or homemade)
1 cup chocolate chips (dark or semi-sweet, based on your preference)
Instructions
Preheat your oven to 325°F (160°C).
In a medium bowl, combine the graham cracker crumbs with melted butter until thoroughly mixed. Press this mixture firmly into the bottom of a 9-inch springform pan to form your crust.
In a large mixing bowl, blend the softened cream cheese, granulated sugar, and vanilla extract using an electric mixer on medium speed until smooth and creamy. Incorporate the eggs one at a time. Gently fold in the sour cream.
Fold in the chopped pecans and chocolate chips until evenly distributed throughout the cheesecake filling.
Pour the batter over the crust in the springform pan. Bake for 60-70 minutes or until the center is set but slightly jiggly.
Let the cheesecake cool at room temperature for about an hour before transferring it to the refrigerator. Chill for at least 4 hours, preferably overnight.
Drizzle caramel sauce over the top of the chilled cheesecake and top with additional pecans for a garnish.
