  • 1 cup ube puree (canned or homemade)
  • ¼ cup milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 cup sweetened condensed milk
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • Fresh fruits or toasted coconut for garnish (optional)

  • Instructions

  • Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by greasing and flouring it.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition. Stir in the ube puree until smooth.
  • Gradually mix in the dry ingredients and milk alternately, starting and ending with the dry ingredients.
  • Pour the batter into the prepared baking pan and bake for about 30 minutes or until a toothpick comes out clean.
  • While the cake cools, whisk together the whole milk, heavy cream, and sweetened condensed milk until smooth.
  • Poke holes in the cooled cake and pour the tres leches mixture evenly over it.
  • Whip the heavy cream and sugar until soft peaks form, then spread over the soaked cake.
  • Garnish with fruits or toasted coconut and chill in the refrigerator for at least 2 hours before serving.
