Ingredients
Scale
1 ½ cups all-purpose flour
½ cup unsalted butter, softened
¼ cup granulated sugar
1 egg yolk
1–2 tablespoons cold water
2 cups whole milk
½ cup granulated sugar
4 egg yolks
2 tablespoons cornstarch
1 teaspoon pure vanilla extract
1 tablespoon unsalted butter
Instructions
Preheat the oven to 350°F (175°C). In a mixing bowl, combine softened butter and granulated sugar, mixing until light and fluffy. This takes around 2-3 minutes. Incorporate the egg yolk.
Gradually add the all-purpose flour to the butter mixture, blending just until combined. If the mixture is too crumbly, add 1-2 tablespoons of cold water.
Press the dough evenly into the bottom of an 8×8-inch baking pan. Use a fork to poke holes to prevent bubbling while baking. Bake for 20 minutes until golden and allow to cool.
In a medium saucepan, heat milk and sugar over medium heat, stirring gently until dissolved. In a separate bowl, whisk egg yolks and cornstarch until blended.
Slowly add a small amount of warm milk to the egg yolks, whisking continuously to avoid curdling. Gradually whisk this back into the saucepan.
Continue to cook over medium heat, stirring constantly until thickened (5-7 minutes). Remove from heat and stir in vanilla extract and butter until melted.
Pour the custard filling over the cooled crust, spread evenly, and chill in the fridge for at least one hour until set.
