8 ounces of white chocolate, chopped or in chips
1 cup of fresh blueberries, rinsed and drained
½ cup of heavy cream
2 large eggs
½ cup of granulated sugar
1 teaspoon of vanilla extract
¼ teaspoon of salt
Optional: ¼ cup of finely chopped mint for garnish
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish with butter or non-stick spray.
In a microwave-safe bowl, add the chopped white chocolate and heavy cream. Microwave in 30-second intervals, stirring in between until smooth.
In a separate bowl, beat the eggs and sugar together until light and frothy. Gradually stir in the melted white chocolate mixture, followed by the vanilla extract and salt. Gently fold in the blueberries.
Pour the white chocolate blueberry mixture into your prepared baking dish. Bake at 350°F (175°C) for 25 to 35 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.
