1 cup of spinach, chopped
1/2 cup of bell peppers, diced
1/2 cup of shredded cheese (cheddar, feta, or a dairy-free option)
1/4 cup of cooked turkey sausage or bacon (or black beans for a vegetarian twist)
Salt and pepper to taste

Instructions
Preheat the air fryer to 300°F (149°C).
In a large mixing bowl, whisk together the eggs and milk until well blended. Season generously with salt and pepper to taste.
Fold in the chopped spinach, bell peppers, cooked sausage or bacon, and cheese until evenly distributed.
Lightly grease a silicone muffin tin or use silicone cupcake liners. Fill each muffin cup approximately three-quarters full with the egg mixture.
