  • 1 pound large shrimp, peeled and deveined
  • 8 ounces rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh scallions, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

  • Instructions

  • Boil a large pot of salted water. Cook pasta according to package instructions until al dente, drain, and let cool.
  • Heat olive oil in a large skillet over medium-high heat. Add shrimp seasoned with Cajun seasoning, salt, and pepper. Sauté 3-4 minutes until pink and opaque. Remove from heat to cool.
  • Chop cherry tomatoes, bell peppers, red onion, scallions, and parsley.
  • In a small bowl, whisk together mayonnaise, Dijon mustard, and Cajun seasoning.
  • Combine cooled pasta, sautéed shrimp, and chopped vegetables in a large bowl. Pour dressing over and toss to coat. Adjust seasoning with salt and pepper.
  • Chill for at least 30 minutes before serving.
