1 cup heavy cream (or substitute with coconut cream for a dairy-free option)
1 cup grated parmesan cheese (freshly grated for best flavor)
4 cloves garlic, minced
1 tablespoon olive oil (or butter for a richer taste)
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Begin by patting your salmon fillets dry with paper towels. Season both sides with salt and pepper.
In a large skillet over medium heat, add the olive oil. Once shimmering, gently place the salmon fillets in the skillet. Sear for about 4-5 minutes on each side, or until golden brown and cooked through. Remove them from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, stirring to combine, and let it simmer for 2-3 minutes.
Gradually whisk in the grated parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, add a splash of chicken broth or more cream.
Return the seared salmon to the skillet, spooning the sauce generously over each fillet. Let it simmer for another minute to heat through.
