  • 1 medium onion, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes (preferably fire-roasted)
  • 1 packet taco seasoning (homemade is recommended)
  • 4 cups beef or vegetable broth (low sodium preferred)
  • 1 cup water
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips

  • Instructions

  • In a large pot, over medium heat, brown the ground beef (or turkey/plant-based alternative) for about 5-7 minutes, draining excess fat.
  • Add diced onion and sauté until translucent, about 3 minutes.
  • Mix in black beans, kidney beans, and corn, heating for 2-3 minutes.
  • Pour in diced tomatoes and taco seasoning, stirring well.
  • Add broth and water, season with salt and pepper, then simmer for 20 minutes.
  • Taste and adjust seasoning if needed, serve hot with desired toppings.
