Ingredients
Scale
- 1 pound ground beef (80/20 lean-to-fat ratio)
- 2 tablespoons garlic butter
- 1/4 cup honey
- 1/3 cup BBQ sauce
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
- In a medium skillet over medium heat, melt 2 tablespoons of garlic butter. Add the ground beef, breaking it apart with a wooden spoon. Cook until the beef is browned and no longer pink, about 7-8 minutes.
- Once the beef is cooked, reduce the heat to low. Drizzle in the honey and BBQ sauce, stirring to combine. Allow the mixture to simmer for 5 minutes.
- While the beef mixture simmers, heat a separate skillet over medium-high heat. Place the tortillas one at a time and warm for about 30 seconds on each side.
- To assemble, take a warm tortilla and add a generous scoop of the beef mixture. Top with shredded lettuce, diced tomatoes, and cheese if desired.
- Plate your tacos and serve immediately. Consider offering extra BBQ sauce on the side.
