2 pounds large shrimp (peeled and deveined, preferably wild-caught)
1 pound crab legs (King or Snow)
1 pound mussels or clams (freshly sourced)
4 medium red potatoes (cut into quarters)
2 ears of corn (cut into thirds)
1 large onion (diced)
5 cloves garlic (minced)
1/4 cup Cajun seasoning (or to taste)
2 tablespoons Old Bay seasoning (optional)
1 lemon (cut into wedges for serving)
Salt and pepper (to taste)
1/2 cup butter (melted)
Fresh parsley (chopped, for garnish)
Instructions
Rinse all seafood under cold water. Peel and devein shrimp if not already done. Cut potatoes, corn, onions, and garlic.
In a large pot, bring 4 to 5 quarts of water to a boil. Add the quartered potatoes and cook for about 15 minutes until slightly tender. Then, add corn and continue cooking for another 5 minutes.
Once the vegetables are tender, stir in Cajun seasoning, Old Bay seasoning, salt, and pepper.
Gently add shrimp, crab legs, and mussels or clams into the pot. Cook for an additional 5-7 minutes until shrimp turns pink.
Carefully drain the seafood boil into a large colander.
